This organic estate is owned by Patrick and Maria Brillet and lies at the heart of the Cognac in the town of Segonzac. The vineyards cover 140 acres in the region called “Grande Champagne” including 12 acres for organic red wine, 10 acres for organic Pineau des Charentes and 291 of Cognac. The “Grande Champagne” is located primarily on chalk hills and is known for making the finest cognacs in an area of 85700 acres, of which 17% is dedicated to production of cognac. This Pineau des Charentes is comprised of old vines Ugni Blanc and Colombard from the single vineyard of “Vignes Ouche De Breuil”. These old vines produce very aromatic and concentrated grape juice, giving this Pineau great aromatics and rare complexity. Natural pesticides are used to fight diseases as opposed to synthetic products, thus respecting the environment. All grapes are hand picked. The harvest is scheduled only a few days prior in order to obtain the best balance. The vines are planted at high density (5,000 vines per hectare) in order to create a competitive environment and to sink deep into the soil, reaching into the subsoil to express the terroir.

The production, vinification, distillation, ageing, bottling and sales are all done at the Domaine. Patrick Brillet, a trained oenologist, comes from a family of Cognac producers since 1684.
